Carrot cake Overnight Oatmeal
With crisp carrots in season, why not try the carrot cake flavored over night Oatmeal. The spices added give the oatmeal perfect carrot cake without the guilt of eating unhealthy food.
- 1/4 cup of rolled oats
- 1/2 cup milk
- 4 tsp of chia seeds
- 2 tsp flaxseeds
- 1 tsp honey
- 1/2 tsp of nutmeg
- 1/2 tsp of cinnamon
- 1/2 tsp of cardamom
- 1/2 cup of grated carrot
- 3-4 pecans
- 2 tsp grated carrots
In a mixing bowl, add oats, grated carrots, chia seeds and flax seeds.
To this add nutmeg and cinnamon and cardamom.
Add warm milk to this bowl and stir all the contents together.
Add honey to this mixture and cover the bowl with a lid and leave it for 8-10 hours.
Warm this Oatmeal in a microwave for 3 mins or in a saucepan. Add few teaspoons of milk if the mixture looks to thick.
Serve this soaked pudding with freshly grated carrots,pecans on top and a hint of honey.
