Egg Bhurji

Do you have a recipe that you make when you are hungry but don’t want to end up cooking like crazy? Well, I have one. My classic street style Egg bhurji – Anda bhurji pav.

We did a mini trip to Texas over the weekend. The trip was great, we had fun. Hiked the Enchanted rock, took a walk across the lady bird lake and met some of my friends.

Going out after 8 long months certainly takes a toll. The post trip cleanup is exhausting. At this point, I am least interested in making elaborate meals. Nor is my pantry/fridge is loaded. All that I have is few eggs and a loaf of bread. And some onions maybe 😀

So the best I can come up with is scrumptious and delicious Egg bhurji. The street style version that has lots of garlic, onions and is spicy. I remember having bhurji pav on street that gave me runny nose because of the heat of spices. I live for moments like these 😀

The Egg bhurji recipe is really simple but there is more room to messing up when the recipe is simple. Don’t you think?

 

Let’s make Egg bhurji

  • In a deep wok/pan, heat 2 tbsp oil on medium flame. You can also use butter if you’d like.
  • Add 4-6 cloves of chopped garlic and 2 tsp grated ginger. Also add 7-8 chilies slit vertically.
  • Roast for 2-3 seconds/until fragrant.
  • Reduce the flame and add finely chopped onions. Add a pinch of salt to speed up the cooking.
  • Add pinch of asafoetida, 1 tsp turmeric.
  • Also add 1 tbsp garam masala and 1 tsp of chaat masala. Mix everything together.
  • Cover the pan with lid and let the onions cook until translucent. About 5 mins.
  • Then reduce the flame.
  • Now crack eggs one by one. 
  • If you are unsure of cracking the eggs clean into the pan, crack them in a bowl and then add.
  • I have used 5 eggs for 2 people.
  • Now mix everything vigorously. Make sure the masala is covered over all the scramble. 
  • Keep mixing until the eggs solidify/cook.
  • Adjust salt and add a pinch of black pepper powder.
  • Cover the pan with lid and let it cook for 5 mins on low.
  • Garnish with finely chopped coriander and then serve hot.
  • Sprinkle generous lemon juice when serving.

Notes: 

  • I would highly recommend making this egg bhurji in salted butter. The flavor of the butter amplifies the taste.
  • I have added 8 chilis to increase the heat. Remember you will be eating it with bread, the heat reduces when paired with bread. Make sure the heat comes through by adding enough chilis.
  • If your chilies are not hot, add chili powder that is hot and spicy.
  • This bhurji can be paired with rotis, tortillas and bread.

Egg bhurji is easy and yummy breakfast/snack recipe. Eggs cooked in delicious Indian spices bring out the best taste similar to street style.

Ingredients
  

  • 5 Eggs

  • Lather bread with butter and toast until crisp.
  • Serve egg bhurji with toasted bread.
