Sunset popsicles

The blend of peach, strawberries and fennel seeds together make the best sunset popsicles. I bet you will like them as much as I do.
  • 3 ripe Peaches
  • 2 cups of strawberries ( if frozen, thaw it completely)
  • 2 tbsp of roasted fennel seeds (coarse powder)
  • ½ cup of sugar divided into 2
  • 1 cup water
  1. Chop the peaches and strawberries (if fresh) into small pieces.
  2. In a saucepan, add peaches and ½ cup of water and let it cook for 10 mins on medium flame.
  3. Cover the pan with lid while cooking.
  4. Once the peaches look soft, add sugar and fennel powder and mash the fruit chunks to a smooth paste.
  5. Mix and let it simmer without lid until the sauce thickens.
  6. Once thick, turn off the flame and let it cool.
  7. If the peach sauce looks chunky, grind to a smooth paste when it cools down.
  8. Similarly cook the strawberry and make a thick paste.
  9. Adjust the sweetness in both the fruit sauces and let it cool.
  10. Prepare the moulds and add strawberry and peach sauce one by one.
  11. Place the sticks in each mould and freeze for 2-4 hours
  12. Serve once done!
Add the sauce by spoon slowly or else the sauces may mix.
If the sauces are runny, let the first one freeze and then add the other.
If you are using frozen strawberries, thaw them and then cook, the strawberries may have more water content so you need to cook some more to make it thick.
