Halloween treats, anyone?

Pumpkin cookies are all about pumpkins and oats cookies spiced with all spice. A simple and healthy take on the Halloween treats for the children.
  • ½ cup of all purpose flour
  • ½ cup oat flour
  • 1 and ½ cup powdered sugar
  • 4-5 tsp of olive oil
  • 1 tsp of baking powder
  • ½ cup of baked pumpkin pulp
  • 1 tsp of vanilla extract
  • 1 tsp of all spice or ½ tsp each powder of nutmeg, cinnamon and clove
  • 1 tsp of organic orange color (optional)
  • ⅓ cup of water
  1. In a mixing bowl, add all purpose flour and oat flour.
  2. Add pumpkin pulp to the mixture along with baking powder, sugar and all spice.
  3. Mix all the dry ingredients together properly.
  4. Add olive oil to the mixture and water to the dry mixture along with vanilla extract.
  5. Take 1 tsp of water and mix the orange color to it.
  6. Mix this to the mixture and make a dough. Knead the dough for around 10 mins and refrigerate it for 30 mins.
  7. After 30 mins, remove the dough and let it sit for 10 mins over the counter.
  8. Place the dough between the 2 parchment papers and roll the dough to ⅕th inch thickness.
  9. Using a cookies cutter or stamper, cut the cookies into shape of your choice, I have used pumpkin shape.
  10. Line a baking tray with foil and spray it with a cooking spray.
  11. Cut the cookies and place them into the baking tray.
  12. Place these cookies into a preheated oven of 325F and bake them for 15 mins on each side.
  13. Once the cookies are baked and done, remove the cookies from the oven and let the cool down.
  14. Decorate the cookies with spooky decoration to impress the kids in trick-or-treat.
