Corn Mayo grilled sandwich

What’s your snack when you crave something delicious? I have mine fixed and favorite-The corn mayo grilled sandwich. Creamy mayo and chewy corn kernels along with fine onion makes filling and delicious dish.The grilling makes the sandwich even more alluring.

It’s really easy to make and is ready in 10 mins flat.

Making Corn Mayo filling:

  • Add 1/2 cup Corn kernels to a mixing bowl. Frozen corn works really well.
  • Add 1/4 cup red onion (1/2 medium sized) finely chopped to the bowl. 
  • Add 2 tbsp fresh coriander/cilantro finely chopped to the bowl.
  • Add 2 tbsp red bell pepper finely chopped to the bowl.
  • Add 2 Indian chilies finely chopped to the bowl.
  • Along with that add 3 tbsp Mayonnaise and 1 tsp salt.
  • Add Cajun seasoning if available. Or you can add 1 tsp chaat masala.
  • Mix everything well. Adjust the salt and spice if required.

Making Grilled sandwiches..

  • Melt 2 tbsp butter in the microwave.
  • Place 2 bread slices on the chopping board and slather it with butter.
  • Now flip the slice and add Corn-Mayo mix. Spread a thick even layer.
  • Place the other slice, butter side on the outside.
  • Press the sandwich well and place it on the griller.
  • Grill until golden brown and then transfer on to a plate once done.
  • If using a pan, heat it on medium flame. Spread some butter and place the slice on the pan.
  • Let the bottom get crisp and toasty. Then flip and toast the other side.

Instructions
 

Corn-Mayo mix

  • Adjust salt and seasoning.

Grilling
