Carrot cake overnight Oatmeal
Life looks good when you start caring about yourself. I realized this only after I moved away from the house and started taking care of myself. The few, very little changes in my diet has really helped me. I feel more positive about myself and feel a little gorgeous every time I see myself in the mirror.
What changes did I make?
I moved to more healthy and organic diet. Before that, I was into junk food. Eating a lot in a single meal and very little exercise.
After noticing a few inches growing here and there and puffiness on my face made me realize that may be, just maybe I am not making an effort to take care of me, my body, my health.
I realized that I was having my breakfast very late in the first half of the day and so I thought of moving towards breakfast oats for a better start to the day without spending too much time in the kitchen. I am lazy that way 😀
From making early morning Oats porridge to overnight soaked oats, I fell in love with oats.
What is overnight soaked Oats?
Oats are either rolled or steel cut. They taste best when they are cooked or soaked for a period of 8-10 hours.
Oats are usually soaked into milk, coconut milk or almond milk or also in a fruit juice so that they become a little mushy or soft. Usually recommended overnight so that we have a beautiful breakfast waiting for us in the morning without making much effort.
Does this recipe contain carrot cake?
No no NO! this oats pudding does not have carrot cake or any sort of refined sugar nor refined flour.
I have added grated carrots, all spice mix, pinch of cardamom and a dash of honey. Just like any other carrot cake. Sounds so good, isn’t it?
The recipe includes everything that is easily available at home. I have added grated carrots in sync with the upcoming carrot season. And incorporating seasonal fresh produce is so much fun, isn’t it?
Chia seeds and flax seeds is mainly for the creamy, gooey texture that it imparts to the pudding. You can skip flax seeds if you wish to.
- ¼ cup of rolled oats
- ½ cup milk
- 4 tsp of chia seeds
- 2 tsp flaxseeds
- 1 tsp honey
- ½ tsp of nutmeg
- ½ tsp of cinnamon
- ½ tsp of cardamom
- ½ cup of grated carrot
- 3-4 pecans
- 2 tsp grated carrots
- In a mixing bowl, add oats, grated carrots, chia seeds and flax seeds.
- To this add nutmeg and cinnamon and cardamom.
- Add warm milk to this bowl and stir all the contents together.
- Add honey to this mixture and cover the bowl with a lid and leave it for 8-10 hours.
- Warm this Oatmeal in a microwave for 3 mins or in a saucepan. Add few teaspoons of milk if the mixture looks to thick.
- Serve this soaked pudding with freshly grated carrots,pecans on top and a hint of honey.
